Lots of options but in the Pattaya area the bar I'd recommend for the curious in Sally's on Soi 5 in Jomtien, not far from Immigration. It's a laid back bar with both ladyboys and genetic girls. Good music at the proper volume, a free pool table, the right vibe, and low prices.

Although transgenders inhabit the entire planet, the ladyboy scene is somewhat unique to Thailand. I think Aunt Mildred would enjoy buying a drink for a ladyboy and taking pictures if she knew where to go.
